V is immortal, he's more of an idea than a man -and a man can die but an idea can't, and he represents freedom, individualism and truth.
And Evey represents the people he is trying to save.

besides the political side of the movie, what i found was also very interesting was the love story between V and Evey, the way the government turned him into a violent monster but in front of true love he's just as vulnerable a man as everyone. Because anyone can rebel themselves against an unjust government, but not even the most free and strongest man cannot rebel himself to true love. And in that moment no matter what, he sees right into his true soul, even if he'd worn a mask his entire life.
